Roasted Baby Red Potatoes

Ingredients:

1 bag tiny baby red potatoes (you can cut up regular potatoes as well.)
4-5 cloves of garlic
salt
pepper
olive oil

You can really use any kind of potato you like for this recipe. Cut up some brown baking potatoes into slices or chunks, if you like. I happened to be at the Farmer's Market and these teeny tiny red potatoes stopped me in my tracks. I couldn't leave without them.

Preheat oven to 350 degrees. Wash and dry the potatoes. Cut them in half and leave the small ones whole. Throw them in a bowl, cover with some olive oil, salt and pepper and the chopped garlic. Toss.
This is a really tasty and quick side dish, you can make it with the oven fried chicken, since I made it so that the cooking time is exactly the same! How easy is that?

Line a baking sheet with non-stick-foil.

Lay the potatoes out evenly, in one layer. Bake for 30 minutes, toss around and bake for another 20 minutes.
