My mom
always made this for us as kids. I know, we're Southern like that.
I don't have time to stand over a hot stove so I made up this jambalaya recipe
for a crock pot. Thus the 'cheaters,' as the pot does all of the work except
for shoveling it into your mouth.

Ingredients:
1 chicken breast, cut into cubes (frozen, ok)
1 large onion, chopped
1 bell pepper, chopped
3 cloves of garlic, chopped
1 (28 ounces) can diced tomatoes (DO NOT DRAIN) 2 cups fully cooked smoked
sausage
1 Tablespoon parsley flakes
½ teaspoon dried thyme
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon Tabasco
¾ pound frozen fully cooked shrimp
3 cups cooked rice
Put the chicken breast in the bottom of the crock pot. Add all of the ingredients, EXCEPT the shrimp. Stir to combine.
Cover and cook on low for 7 hours or high for 5 hours.
Add the shrimp at the end, stir up - the heat will thaw the shrimp just right.


Serve over cooked rice. Really tasty, and wasn't that the easiest? It should last you a few days, or none at all depending how big your family is. No mess, either.
