Frittatas are a nice meal - but they are even MORE FUN when they are mini!

mini frittatas

In gredients:
4 eggs
milk
pepper (any kind of additional spices you want)
chopped bacon
shredded cheese

Preheat oven to 350 degrees F.

Start by cracking your eggs in a bowl and scrambling them up with a fork. Add some salt, some pepper or you can add any kind of spices you like. I always add a few dashes of milk, it softens up the egg.

Tiny and yummy, and the clean up is a cinch!

Spray a muffin tin with non-stick spray, or coat liberally with butter.

Pour in your egg mixture, 4 eggs will get you six little cups full (see left).

 

Now you can sprinkle on any toppings you like. I'm trying to fatten up the Kid, so I used chopped bacon and topped with shredded cheese.

Bake in the oven for 15 minutes or until egg is slightly firm.
