Mocha Cupcakes from Clare Crespo's "Hey There Cupcake".

I made them with coffee flavored icing. Too yummy.

Mocha Cupcakes

In gredients:

1-1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup cocoa powder
1/2 cup butter
1 cup sugar
1 egg
1/2 cup whole milk

1/2 cup strong brewed coffee
1 tsp vanilla

Preheat oven to 350 degrees.Put liners in cupcake pan.

Sift the flour, baking powder, baking soda, salt and cocoa together in a large bowl.

In your mixer, cream the butter and sugar til they make that lovely fluffy yellow look. Then add the egg.

Now alternate the dry and wet ingredients to the butter mixture. Beating until smooth.

It should look lovely....like this!

Ah, the best part. COFFEE. Mix the coffee, vanilla and the milk together. Set aside.
Now spoon the batter into your prepared tins. I used these new sili-cups I got as an xmas gift...eh, not that great. I say go with the old standby, paper liners. You can't go wrong.
Bake them for about 15 minutes or so. Use your handy dandy cake tester or a toothpick, to make sure they are good and done.

Any frosting will do well with these, I just took a regular old vanilla buttercream recipe but added about two teaspoons of strong coffee to the mix.

And really, don't doilies make everything that much cuter?
