Crock pot cooking, it's easy, it's fun! This recipe uses some sweet spices and just three ingredients, super easy!

Ingredients:
1 small butternut squash, seeded and peeled, cut into cubes
3 apples, peeled and cored, cut into fourths
5 pork loin chops - kinda thick
1/4 cup sugar
1/2 cup brown sugar
2 Tablespoons flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup apple juice
After you've worked your Iron Chef magic, put the squash and the apples in a layer on the bottom of the crock pot.

Pour the apple juice slowly down the side of the pot, you just need a little moisture to get things going.
Turn on the crock pot to low and let cook for 7-8 hours.

These chops come out very tasty and the squash+apples are very mushy. I am not a fan of the mush, but the two go together quite well, I'll admit.
I usually serve this with rice, but hey. I'm asian like that.
The great thing about Trader Joe's is their pre-packaged items. It makes cooking a lot easier. Let me tell you, seeding and peeling a butternut squash is a pain in the ass, so there are these convenient bags of pre-cut squash in the veggie aisle at TJ's. Do yourself a favor and grab one.
Also - peeling apples is a pain in the ass. I'm no Iron Chef, dammit.



Mix all the dry ingredients together. Coat both sides of the pork in the sugar mixture and lay the chops on top of the squash and apples. Sprinkle the rest of the sugar mix on the top or over the squash/apples.
