Tortellini Soup

Ingredients:
2 teaspoons olive oil
2 cloves garlic, finely chopped
1 zucchini chopped small
1/2 cup frozen peas (no need to thaw)

1/2 cup frozen corn (no need to thaw)
1/2 teaspoon dried oregano
1 8oz can tomato sauce
1 8oz can diced tomatoes
3 cups water
1/2 cup canned white beans
1-1/2 cups tortellini

This is a surprisingly tasty soup, considering there are no spices, except for a little oregano. It's really flavorful and satisfying. It also is great to feed to babies who are on their way to table foods. My 11 month old loves it!

I served it with a side of pita, carrots and hummus.


Don't ask me why all of these things are Trader Joe's brand...it just worked out that way. Most stuff you can keep in your pantry for quite a while, except for the zucchini.

Tortellini is a filled pasta. In case you are not in the know. I like to use the MINI tortellini, found bagged in the pasta aisle, because 1. I *LOVE* mini things and 2. They keep really well for a long time, in case you don't want to make this soup right away.

In a soup pot, saute olive oil and garlic for just a few seconds. Don't burn it! Add zucchini, peas, corn, oregano, tomato sauce, diced tomatoes and water. Cook on medium heat for 10 minutes.

Add the beans and tortellini. Cook for another 10 minutes, until the pasta is soft.
